Fricassee is actually a meat dish with sauce (traditional white) - there are many variations, with chicken, fish, beef - you can also add mushrooms, peas, tomatoes.
I really liked this recipe because it is simple, elegant and very tasty.
Cut the chicken breast into cubes - not very small.
Sprinkle 1 tablespoon of flour with your hands, mix gently.
In a deep frying pan, heat the butter and oil well.
Add the meat, leave for about 5 minutes without stirring.
Then stir periodically to brown the chicken pieces on all sides.
Pour the sour cream.
Stir and simmer for about 5-10 minutes.
During this time the sauce thickens, add salt, pepper and optionally nutmeg.
And ready - serve with any garnish you like - rice, potatoes, vegetables, etc.
