Cherry Clafoutis is one of the most cherished French desserts, essentially a baked pancake with fruit. While you can use a variety of combinations, the cherry version has become our favorite. I've also tried it with strawberries, which was delicious, but cherries complement this batter even better.
It’s quick and easy to prepare; just make sure to have fresh or thawed fruits ready beforehand.
Place the cherries in a tray (28-30 cm) greased with butter and lined with breadcrumbs.
If you have a silicone tray, there's no need to grease it.
Combine the rest of the ingredients in a bowl and mix thoroughly with a whisk or blender until you achieve a pancake-like batter.
Pour the batter over the cherries in the tray.
Place the tray into the preheated oven set at 200 degrees Celsius for 30-35 minutes.
Allow it to brown and rise significantly; ensure you use a high-sided tray, similar to one for a sponge cake.
Although it rises in the oven, it will deflate slightly after 5-10 minutes once removed. This is normal.
Serve warm, lightly dusted with sugar and a potential vanilla or fruit sauce.
You can also bake it in small, individual molds and serve it directly in them.
