It is a classic recipe, a little improvised by me - very good and healthy.
Wash and clean the fresh mushrooms. Remove the leg (leave them in a separate plate) and carefully clean the inside of the mushrooms with a knife.
Cut the mushroom legs into small pieces, wash the chicken and cut it into cubes, then peel the onion and cut it in half. Pour a little oil into a pan, and put the onion, meat and legs together.
Let them brown, then turn off the heat and leave for a while until they cool.
Put this composition through a meat grinder, or mash them well with a blender.
Over the chopped composition, add the chopped greens, finely grated cheese, salt, pepper to taste.
Mix well.
Fill the prepared mushrooms with the previous composition, grease them with mayonnaise (they will make a reddish crust) and put them in the oven.
Leave them in the oven until they brown well, then remove them.
They are good both hot and cold - they will surely be the favorites of the family menu.
