This used to be one of the most beloved dishes of my childhood when I would visit my grandmother in Ukraine. They are always made in the zucchini season as an alternative to Potato Fritters - Draniki. They can be served with sour cream, garlic sauce or simply as a side dish to any meat etc.
I recommend zucchini fritters, they are very quick and delicious!
Shred the zucchinis on the big hole side of the grater.
Add the eggs, flour, salt and pepper - mix well with a fork.
Heat well some oil in a skillet, and scoop the fritters with a spoon.
It's better if you don't make too much so you can move faster with the frying. This way, the zucchinis won't have time to release too much water. Nothing serious will happen, only that the fritters will be a little thinner...
Fry over medium heat until nicely browned on both sides.
Remove from the pan on paper towel to absorb excess oil.
Serve hot with sour cream or garlic sauce.
