Since we've shown you how to cook quinoa, it's time to present some quinoa recipes. Here's my favorite: delicious and tender pancakes that taste exceptional without anyone realizing they contain quinoa. They are healthy and flavorful.
You can substitute whole wheat flour with plain white flour or oatmeal (the photo shows pancakes made with oatmeal). Step 7 features pancakes made with whole wheat flour.
In a bowl, combine the milk, egg, sugar, and oil.
In another bowl, mix the flour, baking powder, and salt.
Stir in the cooked and cooled quinoa.
Combine with the milk and egg mixture from step 1, mixing well with a whisk or spoon.
Preheat a non-stick pan well, brush it with oil, and spoon in the pancake batter.
You can cook about 3-4 pancakes at once if they're small, or make larger ones.
Cook over medium heat until bubbles form on the surface, then flip them and cook the other side until golden.
Serve hot with your favorite jam or yogurt.
The version here uses whole wheat flour with green walnut jam.
This version uses oatmeal and is served with apricot jam.
