Step 1
Cut the chicken breast into longer and slightly thicker pieces.
I used homemade chicken pastrami as it's tastier and easier to slice.
Step 2
Cut the carrots in the same manner.
Step 3
Slice the cucumbers, then add mayonnaise and mix everything together.
Step 4
Add salt and pepper to taste.
For best flavor, refrigerate for 1-2 hours to let the flavors meld, though you can serve it immediately.
Step 5
Garnish to your liking and serve in a communal bowl or individual servings.
