Discover one of the most innovative creations in raw cuisine today: psyllium husk pudding, a delightfully smooth dish. If you're unfamiliar with psyllium husk, this recipe will pique your interest.
This dessert is extremely healthy and, when combined with almond milk (or any other plant-based milk), flavorings, cocoa, and fruit, it becomes a delicious and nutritious treat.
In a blender, combine the almond milk. If it's unsweetened, add honey or your preferred sweetener to taste.
Adjust the flavors as desired. While I added goji, feel free to incorporate your favorite spices like cinnamon, vanilla, or cocoa powder.
Blend thoroughly.
Transfer the milk to a bowl, add the psyllium husk, and whisk to combine.
Allow it to thicken for about 30 to 60 minutes.
You'll notice that the mixture turns thick.
Transfer into serving glasses and layer with your chosen fruits.
You can mix the fruits into the bowl first or layer them in each glass. I started with oranges.
Followed by the apples...
Finally, garnish with bits of dried apricots.
I recommend chilling the glasses in the fridge for a few hours; the pudding will firm up further, but it's delicious regardless of how long you wait.
Feel free to customize based on your personal tastes. Psyllium husk is neutral in flavor and absorbs the flavors of your chosen ingredients.
Enjoy!
