Ingredients

Almond milk
500 ml
or any other plant-based milk you prefer
Psyllium husk
4 tbsp
   
Honey
3 tbsp
adjust sweetness as desired
Food flavours
1 tsp
or cocoa powder
Fresh fruits
1 cup
I used oranges, goji berries, apples, and dried apricots

Step by step

Step 1

In a blender, combine the almond milk. If it's unsweetened, add honey or your preferred sweetener to taste.

Adjust the flavors as desired. While I added goji, feel free to incorporate your favorite spices like cinnamon, vanilla, or cocoa powder.

Blend thoroughly.

Transfer the milk to a bowl, add the psyllium husk, and whisk to combine.

Allow it to thicken for about 30 to 60 minutes.

You'll notice that the mixture turns thick.

Transfer into serving glasses and layer with your chosen fruits.

You can mix the fruits into the bowl first or layer them in each glass. I started with oranges.

Finally, garnish with bits of dried apricots.

I recommend chilling the glasses in the fridge for a few hours; the pudding will firm up further, but it's delicious regardless of how long you wait.
