Romanian Mici Spice Mix
It took me a while to figure out my own Romanian mici (or mititei) recipe, with a perfect taste and the right flavour, not too much and not too little. I didn't like the summer savory flavour found in all store-bought mici, which covers the taste of meat completely and there is nothing else to feel besides it. But without it, the mititei will taste like normal homemade meat balls, which is not good either. So I worked out the perfect spice formula for mici and you can find it below. I can assure you it works wonders and you can successfully use it for the most delicious homemade Romanian mititei.
The effort is minimal and the essential thing is that all the spices (including the summer savory) require grinding. Tomorrow I will show you my Romanian mititei recipe - perfect, fast, tasty and nothing like store-bought. The kids absolutely love them so I couldn't possibly use store-bought mici, which are only made of scraps of meat-packing, chemicals and all sorts of questionable contents! I'm very fussy when it comes to mici and I couldn't stand them for a long time, rarely would I even taste them. Now I cook homemade mici very often and they prove to be a success all the time for everybody in the family, young or old.

Step by step
Step 1
Measure all the ingredients and combine in a small bowl.
Break the bay leaf into small bits and add it to the bowl.
Step 2
Grind this spice mix using a coffee grinder. Feel the perfect smell.
You should have a coffee grinder in your kitchen - it's so easy to make various flours, powdered sugar (even from low-calorie sweeteners), spice mixes, almond flour etc.
Step 3
Transfer the spices to a jar with a lid and store.
Whenever you cook a batch of Romanian mititei, use some of this mix. This combination is very useful and very tasty.
Step 4
Garlic is actually the main flavour for any mici recipe but it doesn't belong in here.
