I love salads with tuna or with any other fish, but lately I prefer fresh salads, with colourful, crispy vegetables which are now in season. Salad Nicoise combines them all perfectly - various and colourful veggies together with the tuna and boiled eggs, which make it so filling. Besides, it's special because it contains green beans. I find this really nice and that's what caught my eye.
By the way, you will notice the potatoes are optional, I just think they are too much here. This salad is filling enough and adding potatoes might make it too heavy. You can choose the way you like it.
Boil in advance the green beans and the eggs, let cool.
I prefer to steam the beans, then let them cool down, then use in the salad.
You can also use canned green beans, it's more practical and quicker.
Prepare the rest of the ingredients, make sure you have them close to you. It's a lot easier to make the salad if everything you need is ready.
For this recipe I used the highest quality original ingredients: the oil, tuna and olives.
First prepare the dressing for the salad - in a small jar, combine oil, lemon juice, salt and spices.
Close the lid and shake the jar until well blended. The dressing is ready, you can keep in the fridge, if there is more left.
Pick a large platter for the salad and spoon out some of the sauce we just prepared.
Arrange a bed of lettuce and the green beans on top.
Place the tuna pieces evenly over the lettuce and beans.
Then the slices of eggs and tomatoes.
Add the olives.
Save some green beans and sprinkle on top of the salad. I think they look nice and artistic.
Drizzle everything with plenty of vinaigrette.
It's better to serve immediately, while the lettuce leaves are still fresh and tender.
