Budget Yogurt Biscuits

There are very few recipes which go well the first time I cook them, without having to be tested again before I post them on the site. I had a good feeling about this yogurt biscuit recipe. Though it was the first time I was making it, I also wanted to take some pictures for you and, jackpot! - the buiscuits were a great success among the kids and not only. They are quick to cook and, besides, they are also pretty cheap: surely you will find some yogurt lost in the fridge, 2 eggs, a little oil and a few tbsp sugar, won't you? 

I shaped the biscuits in 2 different ways. Some were like long ladyfingers, easy to shape and even better than the classic ones (according to my husband). The other ones were twisted and they were a bit more crispy and kind of original. So, you can shape them as you wish and also combine with various flavours like raisins, walnuts, cocoa etc.

Ingredients
Yoghurt
200 g
can be replaced with buttermilk, kefir etc.
Egg
2 pieces
Vegetable oil
100 ml
Sugar
6 tbsp
White flour
400 g
Salt
0.5 tsp
Baking powder
10 g
Step by step
Step 1

In a bowl, combine yogurt, 2 tbsp sugar, 2 eggs, oil and salt.

Mix well with a spoon or a spatula.

Now stir in the flour and baking powder.

Save a little flour for when shaping the dough on the table.

Stir the mixture well with a spatula or spoon until the flour is incorporated.

Dust the work surface with flour and turn dough onto it.

Knead with your hands for a short while, until dough is smooth, soft and easy to work.

Divide dough into about 24 equal parts.

Shape each piece of dough as you want, either into a ladyfinger, a round or a twist.

To make ladyfingers, I just shaped the pieces of dough into small sticks.

And I pressed gently with my fingers to flatten it.

Place 4 tbsp sugar on a plate. Coat one side of the biscuit with sugar.

Arrange the ladyfingers, sugar side up, on a baking sheet, maybe lined with parchment paper.

To make the twisted biscuits, I shaped a long thin rod, which I then folded in 2 and braided. I coated one of the sides with sugar.

To make the round biscuits, simply shape the dough into flat circles and coat them with sugar on one side. Don't skip this part - it makes the biscuits more crispy and tastier, even.

Bake the biscuits in the preheated oven to 200 degrees C for 20-25 minutes. Try not to brown them too much.

Here are the twisted biscuits. 

Let cool for a while and serve with great appetite. They are so good, unexpectedly good!
